Week 14 - Buttermilk Biscuits

In week 14, I was serving leftover soup and wanted some bread to go along with it. I decided to make Buttermilk Biscuits from the 1950 Cookbook "Better Homes and Gardens Cook Book".

Better Homes and Gardens Cookbook, 1950 edition

I've made buttermilk biscuits in the past, but always the store-bought kind from the cans. There is certainly nothing wrong with these, they're quick and easy and taste pretty good, but I figured that now would be the perfect time to try to make these from scratch.

My typical go-to biscuits choice, the pop-n-fresh cans.

I don't always like making bread because it generally requires lots of kneading and waiting for the dough to rise. This recipe was great because I only had to mix the ingredients, knead for 30 seconds, roll, cut out and bake. It really took only a few minutes longer than popping open a can of ready-made biscuits.

Rolling and cutting out the dough

I decided to cut this recipe in half because it said that it made two dozen and we didn't need that many. This was a mistake as the halved recipe barely made eight, very small biscuits.  However they were very light and fluffy and tasted very good. They were much less "chemically"-tasting than the store bought kind.  If I were to make these again I wouldn't cut the recipe in half and I would make them much larger than I did.
